The name Fonte comes from the Latin fontis — meaning spring. And that’s exactly what connects our restaurant to the place where it stands. Our cuisine draws inspiration from the surrounding South Moravian landscape. The wines are made in the winery directly beneath the restaurant. I come from the small village of Spytihněv in South Moravia, where my relationship with food and honest work began.
I gained experience alongside some of the leading figures of Czech gastronomy, including Radek Šubrt, Jan Punčochář and Michal Húsek.
For the past three years, I led the kitchen at Galerie Mlýn. At Fonte, I bring with me what has guided me throughout my career: simplicity in a modern form, clean flavours and respect for tradition. Every dish should be easy to understand, yet still able to surprise.
